Producer and distributor of Kampot pepper and Kampong Speu palm sugar, Confirel is a company intrinsically linked to gastronomy. Therefore, we always welcome with great pleasure all initiatives that highlights the culinary heritage of Cambodia and its regions. 

Among these, we welcome the publication by the magazine Focus Cambodia of a series of articles on the pleasures of the table in the different provinces of the kingdom https://focus-cambodia.com/cambodian-eats/ .

The first episode takes you to the mountains of the northeast of Mondolkuri province populated by ethnic minorities. While getting to know the ancestral traditions of these populations, very different from those of the Cambodians of the Mekong riverine plains, you will discover how to simmer a traditional soup cooked in bamboo with local ingredients from the forest.

Then direction the province of Stung Treng, border province of Laos bathed by the Mekong and the rivers Sesan, Sekong and Srepork. Obviously, the delicious fish from these nourishing waters are at the top of the tables in the province.

In the third episode, journalists Focus Cambodia have explored life in the floating villages on Tonle Sap. Here again, the inhabitants benefit from the fishery resources of the fish-bearing waters of this veritable inland sea. In particular, small fish are caught there for the production of prahok, a condiment with multiple flavors, the tasting of which provides an absolutely unique gastronomic experience.

After the fresh waters of the Tonle Sap, here are the sun-drenched waters of the Gulf of Thailand that bathe the coasts of the province of Kampot. Thanks to Confirel, you knew the pepper produced in this province considered by the great chefs as one of the best in the world. Focus Cambodia is committed to making you discover one of the other culinary treasures of this region: the crab.  

The fifth episode of this series takes place both on earth and in the sky since it was filmed in the province of Kampong Speu , where peasant climbers go to gather, from the tops of palm trees, the sap of the flowers of this tree which will give an extraordinary sugar which enters the composition of many recipes of Cambodian cuisine.

Those who have traveled to Thailand are bound to know the t om yum soup with its spicy and sour flavor at the same time. Fish, shrimp, lemon juice, lemongrass, kaffir leaves, chili are the usual ingredients of this soup served everywhere in Thailand. Counting among the dishes of Asian cuisine the most famous in the world, the tom yum will become a national symbol of this country. The Thai government has indeed decided to ask UNESCO to include this dish on the list of intangible heritage of humanity.
